Eggs, spinach, onions & garlic: preheat a cast-iron skillet to low while pre-heating your oven to 325 degrees. Spray lightly with olive oil and add a generous amount of spinach, onions, and a shake of garlic, pepper, and salt. When spinach has just begun to wilt, crack three eggs into the pan and turn the heat to medium; cook until egg whites have turned white, then transfer to the oven for 5 minutes, or until eggs are completely set. Your end result will look like this:

Sweet Italian chicken sausage & string cheese with greens
Two eggs and one egg white, scrambled with spinach and bell peppers, topped with string cheese...and a side of Max attempting a photobomb. :P

Your eats look DELISH! When I was working at the front desk at a gym my go-to eats were usually soup or egg sandwiches on an english muffin :)

Deletei love runny eggs! sometimes i bake them on top of mushrooms and tomato paste to mimic pizza! my go to high-protein meals at work usually involve chicken breast and veggies since i hate to smell up the office with fish ... that doesn't mean i don't on occasion, though!

DeleteHaha Rob always photobombs my food pictures!! For the past few weeks I've just been cooking up a big batch of ground turkey with marinara sauce and eating it for all meals at work. It takes me about 30 seconds to eat so it's good when I need to eat quickly!

DeleteI do a rif on your spinach. Spinach, hard boiled egg (cut up_, goat cheese, onion, and my pepper mix which is basically minced peppers mix (marinated jalapenos and pepperoncini, green olives,capers, onion, dijon and anchovy paste - I make and jar this ahead for the week) I dump it into tupperware and then shake it all together right before eating. SO good.

DeleteI do roast brussels occasionally. I'm a weirdo and I really, really like them, so sometimes I steam them so I get more of the brussels sprout flavor. I know, I'm disgusting lol!

DeleteLove the quick easy healthiness of that first meal! I tend to pack salads for lunch, because all it involves is putting lettuce in a bowl and then dumping whatever else I can find in my fridge on top. That's really all the time/mental power I'm going to exert in the morning ;) Happy WIAW!

DeleteLooks good! I make something similar to your egg/spinach concoction...a frittata with broccoli and onions. I also bring a "Mexican" salad to work: chicken, romaine, sweet potato (or beans), guacamole, and salsa. MMM!

I was in keto for a while but I got out because it was really affecting my workouts =( I do still eat pretty low-carb and I time my carb intake... all carbs are around workouts. As long as I eat some fruit about an hour before I workout I have enough energy to at least maintain my strength =)

ReplyDeleteWhen I have to pack food for classes/work, I tend to pack turkey sandwiches, a cold veggie burger with sweet potato and roasted broccoli, or grain salads with veggies and beans.
