WIAW: Portable High Protein Meals!

Here are the best meals I brought to work last week, in no particular order:




Eggs, spinach, onions & garlic: preheat a cast-iron skillet to low while pre-heating your oven to 325 degrees. Spray lightly with olive oil and add a generous amount of spinach, onions, and a shake of garlic, pepper, and salt. When spinach has just begun to wilt, crack three eggs into the pan and turn the heat to medium; cook until egg whites have turned white, then transfer to the oven for 5 minutes, or until eggs are completely set. Your end result will look like this:




Well, if you choose to serve it with marinara sauce, anyway ;-) I stole this idea from Vanessa at Gourmet Runner!




Shrimp and bell peppers cooked in olive oil and herbs




Grilled chicken, brussels sprouts, and a side of dressing




Sweet Italian chicken sausage & string cheese with greens




Two eggs and one egg white, scrambled with spinach and bell peppers, topped with string cheese...and a side of Max attempting a photobomb. :P

  1. Your eats look DELISH! When I was working at the front desk at a gym my go-to eats were usually soup or egg sandwiches on an english muffin :)

  3. i love runny eggs! sometimes i bake them on top of mushrooms and tomato paste to mimic pizza! my go to high-protein meals at work usually involve chicken breast and veggies since i hate to smell up the office with fish ... that doesn't mean i don't on occasion, though!

  6. Could you post more high protien meals? I am really changing my diet around to incorporate a very high protien
    (research based for other purposes) but I need more ideas. Your blog is like crawling with them! (Insert blog stalk now ;))

    I love anything and everything eggs.

  7. Haha Rob always photobombs my food pictures!! For the past few weeks I've just been cooking up a big batch of ground turkey with marinara sauce and eating it for all meals at work. It takes me about 30 seconds to eat so it's good when I need to eat quickly!

    1. I just started eating turkey this week thanks to your suggestion...was it last week? haha. It's a good switch-up! I also found white meat turkey franks which are super convenient :)

  8. I do a rif on your spinach. Spinach, hard boiled egg (cut up_, goat cheese, onion, and my pepper mix which is basically minced peppers mix (marinated jalapenos and pepperoncini, green olives,capers, onion, dijon and anchovy paste - I make and jar this ahead for the week) I dump it into tupperware and then shake it all together right before eating. SO good.

    When I worked I ate lots of leftovers.

    Ever roasted your brussels? Yum. I roast them and then dump some balsamic on them.

    1. Oh geez that boiled egg concoction sounds delish!!

      I do roast brussels occasionally. I'm a weirdo and I really, really like them, so sometimes I steam them so I get more of the brussels sprout flavor. I know, I'm disgusting lol!

  9. Love the quick easy healthiness of that first meal! I tend to pack salads for lunch, because all it involves is putting lettuce in a bowl and then dumping whatever else I can find in my fridge on top. That's really all the time/mental power I'm going to exert in the morning ;) Happy WIAW!

  10. Looks good! I make something similar to your egg/spinach concoction...a frittata with broccoli and onions. I also bring a "Mexican" salad to work: chicken, romaine, sweet potato (or beans), guacamole, and salsa. MMM!

  12. Love your food! I eat very similar so I wonder do you eat Keto, because all those foods seem low carb? And if it’s so how does it affect your workouts?
    I just take some fruit and nuts to work. My breaks are very short so those work well.

    1. I was in keto for a while but I got out because it was really affecting my workouts =( I do still eat pretty low-carb and I time my carb intake... all carbs are around workouts. As long as I eat some fruit about an hour before I workout I have enough energy to at least maintain my strength =)

  13. That last egg scramble looks delicious! I love anything topped with cheese. ;)

    When I have to pack food for classes/work, I tend to pack turkey sandwiches, a cold veggie burger with sweet potato and roasted broccoli, or grain salads with veggies and beans.

  18. I'm spoiled right now in that I live so close to work and school that I can easily come home and make whatever I want to eat. I'm sure it won't be that way forever though so I'm enjoying it while I can!
